Ayurvedic Dietetics
Role of diet is considered the most important in health and disease. Ayurvedic approach to food, diet and nutrition differs somewhat from contemporary science of nutrition. Ayurveda looks at food and nutrition as an experience involving many other dimensions in addition to what food is composed of. Ayurvedic nutrition is much more than counting calories and knowing nutritional values. It shows that not all individuals can get the same benefits from foods and that every food item has a potential to nourish or to toxify. In this course food is studied from its energetic value (sattva, rajas and tamas), as a provider of nourishment and it’s role as medicine. This unit provides students not only with practical insights into food preparation and combination but also how to eat food to maximise yield of nutrient to create a highly energetic body with strong stamina to withstand stresses of life.
